Atkins Diet Recipes: Low Carb Pound Cake (E-IF)

In partnership with FaveDiets ( ) recipe site, I was asked a couple of weeks ago to post a recipe on how to have a birthday cake while doing Atkins Diet. I tried multiple recipes for both the cake and frosting, and came to one I like. This cake features the coconut and almond flour I ground a few videos ago.

Here’s the original recipe from Linda’s Low Carb:

3/4 cup Almond Flour
3/4 cup Coconut Flour
1 tsp Baking Powder
1/2 cup Butter
4 oz Cream Cheese
3/4 cup Splenda, or liquid equivalent
5 Eggs
1 tsp Lemon Juice
1 tsp Vanilla Extract
Makes 8 servings

249 Calories, 23.7g Fat, 3.2g Total Carbs (1.5g Fiber) , 7.3g Protein
