Easy Low Carb Eggs – Omelette Muffins

4 eggs
shredded monterey jack cheese
medium tomato
3 oz deli meat
canola cooking oil spray
1/4c 1% milk (or use heavy whipping cream)
6 muffin tin pan
Salt & Pepper

1. Preheat oven to 375*
2. Prepare Ingredients – Dice tomato, dice deli meat
3. Whisk 4 eggs with 1/4c milk or heavy cream and salt and pepper
4. Spray muffin tin with cooking spray
5. Put deli meat in muffin tin
6. Top deli meat with diced tomatoes
7. Top tomatoes with shredded cheese
8. Pour egg mixture over tins
9. Bake at 375*F for 20-25 min until center of “muffin” is cooked (test with a toothpick)
10. Let cool for 5 min after taking out of the oven. Enjoy!
